Domaine du Roc des Boutires wines are a serious take on the best of Pouilly-Fuissé. This is an inviting Pouilly-Fuissé from 60-year-old vines. 60% of the grapes are aged in used French oak barrels, giving this white wine a creamy, rich and mineral taste with layers of concentrated fruit, well-integrated barrel and fresh acidity.

The grape harvest, which is completed in 4 days, is done by hand. The grapes are gently transported to the winery by gravity and immediately pressed with whole bunches to filter the must in the most natural way. After pressing, the must is cooled to 8 degrees in steel tanks for 2 days to remove dead yeast cells and residual skins and seeds.
