Gin Mare – pronounced Gin Ma-ray – is produced by Giró Ribot-owned Destilerias MG in a small abandoned chapel in the Catalan fishing village of Vilanova i la Geltrú, just 50 kilometers south of Barcelona. The chapel originally stood on the beach and was used by fishermen to pray before embarking on long fishing trips. In the 18th century, the monks moved the chapel further towards the city to the land the Giró Ribot family has owned since 1950.

Gin Mare is an innovation in the gin category. Focusing on local ingredients, Gin Mare is inspired by Mediterranean cuisine and combines the six traditional gin ingredients: juniper, coriander seed, cardamom, lemon peel, orange peel and mandarin peel with the four local Mediterranean ingredients rosemary, basil, thyme and the local olive variety Arbequina.

All ingredients are distilled in six different ingredient groups in a 250-liter specially designed distiller called Florentine. The citrus peels are macerated for a year before distillation in 50% vol. neutral alcohol from barley and finally distilled. All distillates are then carefully blended with neutral alcohol and purified water to create the finished Gin Mare.

The aromatic juniper and rosemary are immediately captured in the nose. Both are easily recognizable and very prominent, the taste is, if possible, even more powerful and aromatic than the scent. Rosemary and thyme dominate the taste buds in the foretaste. The juniper is a little more subdued. Then comes the warmth of the citrus peel and the citrus flavor of the coriander seeds. In the long aftertaste lies a pleasant and distinct thyme.
