It was Don José Varela Blanco, a young Spanish immigrant, who established the San Isidro sugar mill in the town of Pesé, the first sugar mill in the then newly created Republic of Panama.”

“Pesé, itself established in the mid-18th century, is located in a fertile valley in the center of Panama. The main work in this valley is now the cultivation of sugar cane, which employs about 10,000 residents.”

While rum is currently aged in numerous countries around the world, the rum from Varela Hermanos is very unique due to the climate of Pesé. The moderate rainfall, cold nights and humid days all play a role in the development and maturation of this rum. In the tropical climate of Panama, the locally grown sugar cane is distilled and aged to perfection in selected small oak barrels.”
