There is only one rum factory left in the country, the Diamond Distillery.
However, the factory has taken over the stills from the last, now closed, distilleries.
This means they have 10 different boilers to make rum.
Some are iconic old wooden boilers, with the “Port Morant” boiler being the oldest.
It was built in 1732 and is still making rum.
Other famous boilers include the “Enmore” boiler, which is a column made of hard rainforest wood.
The blend of boilers used in this rum is a well-kept secret, but it’s clear that it’s both pot still and column still rum.
Rum Nation Demerara Solers No. 14 has been aged in used American Bourbon barrels and for the past 12 months in a blend of sherry casks that previously held Olorosso and Pedro Ximenez sherry.
The aroma starts with a hint of smoke, which is almost barbecue-like.
It’s not as biting as the Jamaica rum, but still full of esters, like the typical British Navy rum style.
The taste is much sweeter and rounder than the aroma.
Almost like syrup without being over-sweet.
Creamy, but also spicy with cinnamon, orange peel and black pepper.
A vibrant, gentle, almost honeyed rum.
The aftertaste is still very creamy, but with the spices in the background.
Oak barrel, coffee, dark chocolate, licorice and aniseed.
A rum of opposites that, while spicy, also has a hint of smoke and is very aromatic.
It is sweet, velvety smooth and has an almost buttery texture.
A perfect blend.
