Diamond Hill, Shiraz Merlot, has a nice dark red color with violet reflections. Great aroma of ripe fruits. The taste is powerful with a spicy richness and ripe tannins from the Shiraz grape and softness and warmth from the Merlot grape.
The grapes ripen under the influence of the bright sunshine and by harvest time in February, the grapes are fully ripe. After picking in the early morning, the still cool bunches are brought for de-stemming and pressing. Fermentation takes place at a low, controlled temperature to preserve the fruit richness of the grapes in the final wine.
The wine is a good companion to red meat, spicy dishes, lamb, veal and cheese.
