Valpolicella wines labeled Ripasso are made from standard Valpolicella wine but are allowed to call themselves Ripasso because of the special technique used. The Ripasso name comes from the Italian word – ripassare – which means to pass again. It’s simply “leftovers” from Amarone production that are reused. Well, the wine has been aged on shells and sometimes kvass from the production of Amarone. This gives the Ripasso wine some of the richness and character of the Amarone – without being quite as powerful, flavorful and alcoholic as the Amarone.

This Valpolicella is just as it should be: ripe and concentrated, fantastically soft and elegant with aromas of dark chocolate and roasted nuts. A great wine for Danish Christmas food, rich roasts, game with sweet berries, walnuts and Parmesan cheese.
