Santa Sofia Ripasso Valpolicella Superiore is a red wine aged for nine months in oak barrels. After aging in oak barrels, it is then bottled for three to six months before being released. The wine is made using the Ripasso method.

It is made from 70 percent Corvina, 25 percent Rondinella and five percent Molinara. The wine has a beautiful and deep red color. Its bouquet and taste are spicy, fruity and full-bodied. The aftertaste is long, pleasant and soft. This wine is ideal with beef, game and cheese. It can be enjoyed immediately, but also has great ageing potential.
